what is Catechin (C15H1406)?
The slightly bitter taste you feel when drinking green tea is due to catechins.
It is a component of what is called tannin or polyphenol. It is derived from tea and is included in white tea, green tea, black tea, and oolong tea, but in the case of black tea or oolong tea, more than half of the catechin is reduced during the fermentation process. The main catechins include epigallocatechin gallate, epigallocatechin, epicatechin gallate, and epicatechin, and are beneficial to health.
